A recent report from the <a href=\"http:\/\/www.nrdc.org\/\" target=\"_blank\">Natural Resource Defense Council <\/a>(NRDC)&nbsp;and the <a href=\"http:\/\/www.law.harvard.edu\/\" target=\"_blank\">Harvard Law School<\/a> describes the &ldquo;<a href=\"http:\/\/www.care2.com\/causes\/are-food-expiration-date-labels-turning-you-into-a-wasteful-person.html\" target=\"_blank\">current food labeling regime<\/a>&rdquo; as a major culprit behind the $165 billion worth of food that Americans throw out every year.<\/p>\n<p>As the&nbsp;<a href=\"http:\/\/www.care2.com\/causes\/are-food-expiration-date-labels-turning-you-into-a-wasteful-person.html#ixzz2fqVz1T1s\" target=\"_blank\">report<\/a>&nbsp;details, most of that uneaten food ends up in landfills where it accounts for 25 percent of U.S. <a href=\"http:\/\/ecowatch.com\/2013\/10\/02\/food-waste-rank-no-3-for-greenhouse-gas-emissions\/\" target=\"_blank\">methane emissions<\/a>. Given that one in six Americans do not have access to a secure supply of food, we need to do something to avoid wasting so much of what we produce, process, package and ship.<\/p>\n<p>Someone has a suggestion and is putting it into practice.<\/p>\n[caption id=\"attachment_311724\" align=\"alignnone\" width=\"500\"]<a href=\"http:\/\/ecowatch.com\/wp-content\/uploads\/2013\/11\/shutterstock_124993205.jpg\"><img loading=\"lazy\" decoding=\"async\" alt=\"Photo courtesy of Shutterstock\" src=\"http:\/\/ecowatch.com\/wp-content\/uploads\/2013\/11\/shutterstock_124993205.jpg\" width=\"500\" height=\"300\"><\/a> Photo credit: <a href=\"http:\/\/www.shutterstock.com\/pic-124993205\/stock-photo-composting-pile-of-rotting-kitchen-fruits-and-vegetable-scraps-as-a-banana-peel-orange-and-onion.html?src=M4YmNbiCyKdZsYTsRcypcw-1-1\">Shutterstock<\/a>[\/caption]\n<p>Doug Rauch, the former president of Trader Joe&rsquo;s, plans to&nbsp;<a href=\"http:\/\/www.npr.org\/blogs\/thesalt\/2013\/09\/21\/222082247\/trader-joes-ex-president-to-turn-expired-food-into-cheap-meals#\" target=\"_blank\">open a new market<\/a>, the Daily Table, that will use fresh produce that is slightly past its sell-by date. The Dorchester, MA business will prepare the food and then sell it at prices low enough to compete with fast-food restaurants.<\/p>\n<p>As Rauch explains it to&nbsp;<a href=\"http:\/\/www.npr.org\/blogs\/thesalt\/2013\/09\/21\/222082247\/trader-joes-ex-president-to-turn-expired-food-into-cheap-meals#\" target=\"_blank\">NPR<\/a>, the Daily Table is meant to be a &#8220;kind of a hybrid between a grocery store and a restaurant, if you would, because primarily it&rsquo;s going to take this food in, prep it, cook it [for] what I call speed-scratch cooking.&rdquo;<\/p>\n<p>Food banks have&nbsp;<a href=\"http:\/\/www.npr.org\/2011\/06\/25\/137375088\/food-bank-shortages-lead-to-innovation\" target=\"_blank\">made it a practice<\/a>&nbsp;to use food salvaged not only from grocery stores but also hospitals, hotels, caterers, restaurants and farms. Stores tend to cast aside bruised produce, fearing they could be sued. People often&nbsp;<a href=\"http:\/\/www.care2.com\/causes\/are-food-expiration-date-labels-turning-you-into-a-wasteful-person.html\" target=\"_blank\">misinterpret the date labels on food<\/a>&nbsp;and discard items that are still safe to eat, as the NRDC\/Harvard Law School&nbsp;report&nbsp;says:<\/p>\n<p>The labels are not federally regulated and can vary from state to state. Despite what most people think, the labels don&rsquo;t communicate whether a product has spoiled. &ldquo;Use by&rdquo; and &ldquo;best before&rdquo; are just suggestions determined by the manufacturer to indicate when food is at its peak quality. &ldquo;Sell by&rdquo; is the manufacturer&rsquo;s suggestion for when the grocery store should no longer sell the product. There is no uniform criteria for any of those terms.<\/p>\n<p><a href=\"http:\/\/mobile.boston.com\/yourtown\/news\/dorchester\/2013\/05\/hold_a_new_type_food_store_is\" target=\"_blank\">Naysayers<\/a>&nbsp;chided the Daily Table for serving &ldquo;blemished&rdquo; &ldquo;past-its-prime&rdquo; fruits and vegetables to residents of lower-income communities.
